Are you a citizen of an EU country? If not, you will have trouble getting a job in the EU. The companies have to prove they can't find an EU citizen for that particular job. Then you have to apply for a residence visa.
If you are an EU citizen and serious about getting a job in France, you need to do a lot of research. Find out what companies routinely hire, what positions are open, get addresses and start sending resumes. Most of this can be done online but it does take work.
The alternative is under the counter work (translate illegal work). You can do agricultural work or wait tables or do cleaning for anyone willing to hire an undocumented worker. Needless to say, these jobs do not pay well and if you are caught, you have trouble, not the least of which is being deported and denied reentry for a certain number of years. Not a good idea!
You might consider finding a company in your own country that routinely sends workers to France. Apply, do a good job and let it be known that you would enjoy being an ex-pat for a few years . . . or longer. That would be the easiest option. Good luck.
