Stick to vegetables and skip the famous French bread. The south of France will probably be easiest because they rely so heavily on fresh produce.
Bio (organic food) is currently very popular in France so if you explain your problem to the wait staff, they can probably make recommendations.

They have hundreds of people who answer questions such as these every day and you probably can just type gluten free France into their Search windows and get your list of restaurants.
